Pilgrim Hat Cupcakes Recipe Will Make Both Kids and Adults Thankful

Let's say it together -- on your mark, get set, go: AWWW! These adorable and delicious cupcakes are going to make every single person at your Thanksgiving Day table, from your toddler to your great-grandmother, feel even more thankful that they're celebrating with such a masterful baker this year! Not only are these adorable treats sweet looking, they're inventive, pretty simple to make, and -- the best part -- they feature mini Reese's Peanut Butter Cups. Can anything go wrong when you add peanut butter? 

Whether you decide to include these Pilgrim Hat Cupcakes alongside your traditional pumpkin pie or say "to hell with it!" and replace your usual desserts with these, you can be sure your guests will coo with delight when you present these after turkey time.

This awesome recipe comes to you from Kitchen Concoctions. Be aware that the measurements for both cupcakes and frosting are only enough to make 2 cupcakes. Obviously, you'll want to adjust this to suit your own needs.

One Bowl Vanilla Cupcakes for Two

Ingredients:

1 egg white
2 tablespoons sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
2 tablespoons butter, melted
1/4 cup flour
1/4 heaping teaspoon of baking powder
Pinch of salt
1 1/2 tablespoons milk
Buttercream frosting, for decorating (recipe below)

Preheat oven to 350 degrees. Line a muffin pan with 2 liners.

In a bowl, add egg white and sugar and whisk until combined. Add in vanilla, almond extract, and melted butter and stir until mixed. Add flour, baking powder, and salt and stir until smooth. Stir in milk. Divide batter equally between the 2 cupcake liners.

Bake at 350 for 10-12 minutes, or until cake is set. Let cool completely, then frost as desired.

Classic Buttercream Frosting for Two Cupcakes

Ingredients:

3 tablespoons butter, softened
1/2 teaspoon vanilla extract
1 1/3 cup powdered sugar
1 1/2 tablespoons milk

Cream the butter and vanilla extract. Slowly add the powdered sugar one cup at a time alternating with the milk, mixing until desired consistency is reached.

Pilgrim Hat Cupcakes

Ingredients:

Prepared white cupcakes (recipe above)
Buttercream frosting (recipe above)
Fudge Stripe Cookies
Mini Reese’s Peanut Butter Cups
Yellow tubed decorator’s frosting

Put a dot of frosting on the top of the peanut butter cups. Adhere the cup to the bottom side of the fudge cookie.

Frost each of the cupcakes with buttercream frosting.

Using yellow tubed decorator’s frosting, pipe on the buckle and the base of the hat. Put one cookie on each cupcake.
